Ingredients:
Butter for greasing
Flour for dusting
Cake
1¾ cups all-purpose flour
1 ½ teaspoons baking soda
1 ½ teaspoons baking powder
2 cups sugar
1 teaspoon salt
1 cup buttermilk
2 eggs
½ cup vegetable oil
1 ½ teaspoons vanilla extract
1 cup hot water
¾ cup dark cocoa powder
Frosting
8 tablespoons butter
⅔ cup dark cocoa powder
3 cups powdered sugar
1 teaspoon vanilla extract
⅓ cup milk
Instructions:
Preheat your oven to 350 degrees F.
Grease the baking pan with butter and dust with flour.
Sift together the all-purpose flour, baking soda, dark cocoa powder, baking powder, sugar and salt into a large bowl.
Add the buttermilk, eggs, vegetable oil and vanilla extract.
Beat the mixture on medium speed for 2 minutes.
Pour in the boiling water and stir.
Transfer the cake batter into the baking pan.
Bake in the oven for 30 minutes.
Let cool for 10 minutes.
Beat the butter in a bowl until light and fluffy.
Stir in the dark cocoa powder, powdered sugar, vanilla extract and milk.
Spread the frosting on the top cake and serve.

Ingredients

1½ cups all-purpose flour

½ cup unsweetened dark cocoa powder

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 cup granulated sugar

½ cup brown sugar

2 large eggs

½ cup vegetable oil

1 tsp vanilla extract

1 cup buttermilk

½ cup hot water

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  • Mix dry ingredients: In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  • Combine wet ingredients: In another bowl, whisk together the sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth. Add the buttermilk and mix well.
  • Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Slowly stir in the hot water until the batter is smooth and slightly thin.
  • Bake: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  • Cool and decorate: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely. Frost with your favorite chocolate frosting or ganache.

Notes

  • For extra decadence, add a layer of chocolate ganache between the cake layers.
  • Use hot coffee instead of water to enhance the chocolate flavor.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
