Ingredients:

– 1 medium-sized apple
– Juice of half a lemon
– 1 spoon of granulated sugar
– 1 tablespoon of unsalted butter
– A dash of ground cinnamon
– 1 tablespoon of apricot jam

For the Batter:
– 3 large eggs
– 150 g of granulated sugar
– A pinch of salt
– 8 g of vanilla sugar (or 1 teaspoon of vanilla extract)
– 120 ml of vegetable oil
– 150 ml of milk (any variety will do)
– 250 g of all-purpose flour
– 16 g of baking powder
– Powdered sugar for dusting

Instructions:

1. Begin by preheating your oven to a moderate temperature, ensuring it’s ready for baking as soon as your mixture is prepared.

2. Take the apple and peel it before coring and slicing it into thin pieces. In a bowl, toss the apple slices with the fresh lemon juice and a spoonful of sugar. This not only adds flavor but also prevents the apples from browning.

3. In a small pan, melt the butter over low heat. Once melted, add the cinnamon and apricot jam, stirring until well combined. Pour this mixture over the apple slices and make sure they’re well coated.

4. Now, let’s prepare the batter. In a large mixing bowl, whisk the eggs with the sugar and a pinch of salt until the mixture is light and fluffy. This process is crucial as it adds air to the batter, giving it a light texture.
