Description

This Zucchini Beef and Cheese Roll is a delicious and easy-to-make dish perfect for a light meal or appetizer. Made with fresh zucchini, parmesan, and smoky Beef, this roll is packed with flavor and texture. It’s a great low-carb option that’s both satisfying and nutritious.


Ingredients

2 zucchini

3 large eggs, whisked

2 cups shredded parmesan cheese

150g smoked Beef (D’Orsogna Brothers Double Smoked Beef Off the Bone)

1 cup spreadable cheddar cheese


Instructions

Preheat Oven: Preheat your oven to 180°C (350°F).

Prepare the Mixture: In a large bowl, combine the grated zucchini, whisked eggs, and shredded parmesan cheese. Mix well.

Bake the Zucchini Base: Line a baking tray with parchment paper and spread the mixture evenly. Bake for 15-20 minutes or until set and lightly golden.

Add Fillings: Once baked, remove from the oven and transfer to a cutting board. Spread the cheddar cheese evenly over the surface, then layer the smoked ham on top.

Roll and Chill: Carefully roll the mixture into a log, using the parchment paper to help shape it tightly. Wrap in plastic wrap and refrigerate for at least 2 hours.
