8 oz linguine pasta
1 lb shrimp, peeled and deveined
Salt and pepper, to taste
2 tablespoons olive oil
3 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
3 cups baby spinach leaves
2 cups cherry tomatoes, halved
3 cups chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh basil leaves, for garnish

Instructions

  1. In a large pot or skillet, combine linguine pasta, shrimp, salt, pepper, olive oil, minced garlic, red pepper flakes (if using), spinach leaves, and cherry tomatoes.
  2. Pour in the chicken broth and heavy cream.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce the heat to medium-low and let it simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked through and the sauce has thickened.
  5. Stir in the grated Parmesan cheese until melted and well combined.
  6. Remove the pot or skillet from the heat.
  7. Garnish with fresh basil leaves before serving.
