Nonstick cooking spray, for greasing
1 ½ cups gluten-free all-purpose flour
2 teaspoons baking powder (gluten-free)
½ teaspoon kosher salt
2 teaspoons cinnamon
¼ cup unsalted butter, melted
¼ cup granulated sugar
1 large egg
½ teaspoon vanilla extract
½ cup no-sugar-added applesauce
1 ½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
For the Glaze:

2 cups powdered sugar
⅓ cup plus 2 tablespoons apple cider or apple juice

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together gluten-free flour, baking powder, salt, and cinnamon.
  3. In another bowl, whisk melted butter and granulated sugar until combined. Add the egg and vanilla extract, whisk until smooth, then stir in the applesauce.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the diced Honeycrisp apples.
  6. Drop tablespoonfuls of batter onto the prepared baking sheet, spacing them about an inch apart.
  7. Bake for 10 minutes or until golden.
  8. While baking, prepare the glaze by whisking powdered sugar with apple cider or juice until smooth.
  9. Once baked, switch the oven to broil. Generously apply the glaze to each fritter bite and return to the oven.
  10. Broil for 2 to 4 minutes until the glaze bubbles and caramelizes.
  11. Remove from the oven and apply another coat of glaze. Let cool for 15 minutes to allow the glaze to set.
