Ingredients
Nonstick cooking spray, for greasing
1 ½ cups gluten-free all-purpose flour
2 teaspoons baking powder (gluten-free)
½ teaspoon kosher salt
2 teaspoons cinnamon
¼ cup unsalted butter, melted
¼ cup granulated sugar
1 large egg
½ teaspoon vanilla extract
½ cup no-sugar-added applesauce
1 ½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
For the Glaze:
2 cups powdered sugar
⅓ cup plus 2 tablespoons apple cider or apple juice
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a baking sheet with nonstick cooking spray.
- In a medium bowl, whisk together gluten-free flour, baking powder, salt, and cinnamon.
- In another bowl, whisk melted butter and granulated sugar until combined. Add the egg and vanilla extract, whisk until smooth, then stir in the applesauce.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the diced Honeycrisp apples.
- Drop tablespoonfuls of batter onto the prepared baking sheet, spacing them about an inch apart.
- Bake for 10 minutes or until golden.
- While baking, prepare the glaze by whisking powdered sugar with apple cider or juice until smooth.
- Once baked, switch the oven to broil. Generously apply the glaze to each fritter bite and return to the oven.
- Broil for 2 to 4 minutes until the glaze bubbles and caramelizes.
- Remove from the oven and apply another coat of glaze. Let cool for 15 minutes to allow the glaze to set.
