Ingredients

  • 1 pound ground beef (or any plant-based ground alternative)
  • 1/2 pound bacon (or turkey bacon)
  • 2 large onions
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 cups breadcrumbs
  • Salt and pepper to taste
  • 1/2 cup ketchup
  • 1/4 cup honey
  • Additional 1/4 cup honey for glaze

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Slice the onions into 1/2-inch thick rings and separate them.
  3. Take a tablespoon of ground beef and press it into the bottom of an onion ring.
  4. Wrap each stuffed onion ring with bacon and secure it with a toothpick.
  5. Dip each onion ring into flour, then egg wash, and finally breadcrumbs.
  6. Place the onion rings on a baking sheet and bake for 20 minutes.
  7. Meanwhile, mix ketchup and honey in a small bowl for the sauce.
  8. After 20 minutes, remove the onion rings from the oven and brush them with the honey glaze.
  9. Return the onion rings to the oven and bake for an additional 10 minutes.
  10. Sprinkle shredded cheese on top of each onion ring and bake for 5 more minutes or until cheese is melted.

Notes

You can customize the filling with your favorite burger toppings like pickles or jalapenos.
