  • 2 cups cherry tomatoes
  • 1 cup vegetable broth
  • 7 oz full-fat canned coconut milk (thick cream only)
  • 3 tbsp nutritional yeast
  • Baby arugula and parsley for garnish

Instructions

  1. Cook gluten-free fettuccine in boiling water until al dente. Drain and set aside.
  2. In a skillet, sauté minced garlic and chopped sun-dried tomatoes in vegetable broth or oil for about 2 minutes.
  3. Add Italian seasoning, balsamic vinegar, and tomato paste. Cook for an additional 2-3 minutes until fragrant.
  4. Stir in cherry tomatoes and broth; cover and simmer for about 3-4 minutes until softened.
  5. Mix in coconut milk and nutritional yeast. Season with salt and pepper; simmer until sauce thickens.
