  • 1 and 1/2 tablespoons cinnamon
  • 1 cup salted butter (2 sticks, softened)
  • 1 and 2/3 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar
  • 1 and 1/2 tablespoons cinnamon

Instructions

  1. Make the filling by beating together softened butter, brown sugar, and cinnamon until smooth. Freeze small balls of filling for about 20 minutes.
  2. Preheat your oven to 350°F.
  3. In a stand mixer, beat the softened butter and granulated sugar until light and fluffy. Add eggs and vanilla extract, mixing well.
  4. Sift in flour, then fold in dry ingredients (baking soda, salt, cream of tartar) until just combined.
  5. Gently mix in the frozen cinnamon filling.
  6. Shape dough into balls; roll in a mixture of sugar and cinnamon before placing on lined baking sheets.
  7. Bake for about 11-12 minutes. Reshape cookies immediately after baking if needed.
