  • 3 large chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • ½ cup soy sauce
  • ½ cup honey
  • ¼ cup rice vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons Sriracha
  • 1 teaspoon arrowroot powder mixed with water (for thickening)
  • Broccoli florets (to serve)

Instructions

  1. Prepare the rice according to package directions in a medium saucepan.
  2. In a mixing bowl, combine olive oil, soy sauce, honey, rice vinegar, garlic, Sriracha, and seasonings. Marinate chicken for at least 10 minutes.
  3. Preheat air fryer to 375°F (190°C). Cook marinated chicken for 15-20 minutes until fully cooked.
  4. In another bowl, mix arrowroot powder with water until smooth. Once chicken is cooked, stir in the slurry to thicken the sauce.
  5. Serve rice topped with chicken and broccoli. Drizzle with spicy mayo made from mayonnaise and Sriracha.
