  • 2 ribeye steaks
  • 16 tbsp unsalted butter (melted, divided)
  • 1 shallot (brunoise)
  • Fresh tarragon and chives
  • Red wine vinegar
  • Egg yolks
  • Neutral oil for frying

Instructions

  1. Peel and cut the potatoes into fries; soak them in ice water for at least 2 hours.
  2. Salt-brine the ribeyes by sprinkling kosher salt on both sides and refrigerating uncovered for 1 hour.
  3. Preheat oil to 275°F; fry soaked potatoes until soft, then freeze for 30 minutes.
  4. Prepare béarnaise sauce by cooking shallots with herbs, vinegar, and wine, then emulsify with egg yolks and melted butter.
  5. Sear the steaks in a hot cast iron skillet until medium rare, then let rest before slicing.
