  • 1 teaspoon chili powder
  • 3 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 2 teaspoons dried parsley
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 teaspoon salt (to taste)

Instructions

  1. Spray the slow cooker with cooking spray and place aluminum foil balls at the bottom to elevate the chicken.
  2. Prepare the chicken by removing neck and giblets, rinsing, and patting dry.
  3. In a bowl, whisk together all seasonings and rub generously over the chicken.
  4. Place seasoned chicken on top of foil balls in the slow cooker. Cover and cook on low for 7-7.5 hours or high for 4-4.5 hours until internal temperature reaches 165°F.
  5. For crispy skin, broil on a baking sheet for an additional 3-5 minutes before serving.
