1 ½ pounds beef stew meat, cut into bite-sized pieces
1 pound baby potatoes, halved
4 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon smoked paprika
½ teaspoon dried thyme
½ teaspoon dried rosemary
½ teaspoon salt (or to taste)
¼ teaspoon black pepper
¼ cup beef broth
1 tablespoon olive oil
Heat olive oil in a skillet over medium-high heat. Add the beef bites and sear on all sides until browned (about 2–3 minutes per side). Transfer the beef to the slow cooker.
Add the halved baby potatoes to the slow cooker with the beef.
In a small bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Mix well, then pour the sauce over the beef and potatoes.
Pour the beef broth into the slow cooker.
Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and the potatoes are fully cooked.
