Ingredients

  • 1 English cucumber, chopped (or 4 Persian cucumbers)
  • 4 tomatoes, chopped
  • 1 red onion, chopped
  • ¼ cup parsley, chopped

Dressing:

  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried mint
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Finely dice or chop the vegetables and add to a large mixing bowl.
