  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 4 garlic cloves, finely chopped
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 (28-ounce) can whole peeled tomatoes
  • 6 large eggs
  • Salt and pepper to taste
  • Fresh cilantro and parsley for garnish

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add the diced onion and red bell pepper; sauté for about 5 minutes until the onion is translucent.
  2. Stir in the garlic, paprika, cumin, and chili powder; cook for another minute.
