Description

These sweet and savory Hawaiian Roll Breakfast Sliders are a perfect crowd-pleasing recipe for brunch gatherings, potlucks, or easy make-ahead breakfasts. With fluffy eggs, savory sausage, melty Colby Jack cheese, and a buttery maple glaze, these breakfast sliders bake up warm, gooey, and packed with flavor. Ready in just 30 minutes!

For the sliders:

  • 12 Hawaiian rolls
  • 16 ounces breakfast sausage
  • 6 large eggs
  • 4 ounces Colby Jack cheese, sliced
  • Salt and pepper, to taste

For the glaze:

  • 1 tablespoon butter, melted
  • 1 tablespoon maple syrup

Instructions

Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, cook the sausage, breaking it apart as it browns. Once fully cooked, remove from the skillet and optionally drain on a paper towel-lined plate.
Crack the eggs into a bowl, whisk them, and season with salt and pepper.
Reduce heat to low and pour the eggs into the same skillet. Cover and cook until just set. Fold the eggs into a rectangular shape and remove from heat.
In a small bowl, whisk together the melted butter and maple syrup to make the glaze.
Slice the Hawaiian rolls in half horizontally without separating the individual rolls.
Layer the cooked eggs, sausage, and cheese slices onto the bottom half of the rolls. Place the top half back on.
Use a serrated knife to cut between each slider.
Brush the tops of the rolls with the maple glaze.
Bake the sliders on a baking sheet for 18–22 minutes, or until hot and the cheese is fully melted.
Serve warm and enjoy!


Notes

You can substitute bacon or ham for the sausage and use any cheese of your choice such as cheddar, Swiss, or mozzarella.

To store leftovers: Refrigerate in an airtight container for up to 4 days.

To freeze: Assemble the sandwiches (without glaze), freeze until solid, wrap individually, and store in a freezer bag for up to 6 months.

To reheat: Unwrap and bake frozen sliders at 350°F for 20–25 minutes, brushing with glaze before baking.
