  • 200 g rice noodles
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 100 g bean sprouts
  • Fresh cilantro and mint, chopped
  • 100 g crushed roasted peanuts
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon chili paste (optional)

Instructions

  1. Cook the rice noodles in boiling water for 4 to 6 minutes until al dente. Drain and rinse under cold water.
  2. While the noodles are cooking, prepare the vegetables by julienning the cucumber and carrots and slicing the peppers.
  3. For the dressing, whisk together soy sauce, lime juice, honey, and sesame oil in a small bowl.
  4. In a large bowl, combine noodles with all prepared vegetables and herbs.
