  • 4 medium jalapeños
  • 1 tablespoon olive oil
  • 4 ounces cream cheese (room temperature)
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1 cup (113 g) mild cheddar cheese (shredded, divided)
  • 6 strips bacon (cooked, divided)
  • 4 slices Texas toast
  • 4 tablespoons unsalted butter (divided)

Instructions

  1. Preheat the oven to 425°F.
  2. Brush jalapeños with olive oil, place on a baking sheet lined with parchment paper, and roast for about 15 minutes until slightly charred.
  3. Allow jalapeños to cool, then chop them and mix into room temperature cream cheese along with garlic salt, black pepper, and onion powder until smooth.
  4. Butter one side of each slice of bread. Spread half of the cream cheese mixture on the unbuttered side of two slices.
  5. Layer three strips of bacon and half a cup of cheddar cheese on top. Top with another slice of bread (butter side out).
  6. Heat a skillet over medium heat and cook the sandwiches until golden brown and crispy, about 3-5 minutes per side.
