  • 1 lb penne pasta
  • 1 lb boneless, skinless chicken breast
  • 2 tbsp olive oil
  • 1 ½ tsp Cajun seasoning
  • 1 red bell pepper
  • 1 green bell pepper
  • ½ red onion
  • 3 cloves garlic
  • 2-3 jalapeño peppers
  • 4 tbsp butter
  • ¼ cup all-purpose flour
  • 2 cups milk or half-and-half
  • 1 cup grated Parmesan cheese

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
  2. Season the chicken with Cajun seasoning. In a skillet, heat 1 tbsp olive oil over medium-high heat and cook the chicken until browned (about 5-7 minutes). Remove from skillet.
  3. In the same skillet, sauté sliced bell peppers, onion, garlic, and jalapeños in remaining olive oil until tender-crisp (about 5 minutes). Remove from skillet.
  4. Melt butter in the skillet over medium heat; whisk in flour for about 1-2 minutes. Gradually add milk, stirring until smooth. Simmer until thickened (about 2-3 minutes). Stir in cheese, salt, and pepper.
  5. Combine cooked pasta, chicken, and sautéed vegetables with sauce in the skillet; toss gently to coat.
  6. Serve hot garnished with chopped parsley.
