  • 1/2 cup water
  • 1/2 cup shredded carrots
  • 1/2 cup shredded radish
  • 1/3 English cucumber (cut into matchsticks)
  • 1/2 red onion (sliced thin)
  • 1 clove garlic, minced
  • 1 TBSP chopped green onion
  • 1/2 tsp sea salt
  • 1/2 tsp sugar (optional)
  • 1/4 tsp dried oregano leaves

Instructions

  1. Wash a medium-large mason jar and set it aside.
  2. Slice the carrots, radishes, and cucumber into matchsticks.
  3. In a medium saucepan, bring vinegar and water to a boil.
  4. Add garlic, green onion, sea salt, oregano, and sugar to the boiling mixture; stir until dissolved. Remove from heat and let cool for 5–10 minutes.
  5. Place sliced vegetables in the mason jar and pour the hot vinegar mixture over them.
  6. Allow the jar to cool to room temperature before sealing it and refrigerating.
