Ingredients
Scale
4 large eggs
1 cup milk (whole or skim)
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup sugar (adjust to taste)
4 cups bread cubes (white or whole wheat)
1/4 cup melted butter
Optional: maple syrup for serving
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined.
- Add the bread cubes to the egg mixture and stir until every piece is fully coated. Let it sit for 2–3 minutes to soak up the mixture.
- Spoon the bread mixture into the prepared muffin tin, filling each cup about 3/4 full.
- Drizzle the melted butter evenly over the top of each muffin.
- Bake for 20–25 minutes, or until the muffins are golden brown and puffed up.
- Allow the muffins to cool slightly before removing them from the tin.
- Serve warm, dusted with cinnamon sugar or drizzled with maple syrup for extra sweetness.
Notes
- These muffins are a great way to use up stale bread!
- For a healthier option, reduce the sugar or substitute with honey or maple syrup.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven before serving.
- Sprinkle cinnamon sugar on top before baking for a crunchy finish, or dust with powdered sugar after baking for a lighter touch.
