4 large eggs

1 cup milk (whole or skim)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 cup sugar (adjust to taste)

4 cups bread cubes (white or whole wheat)

1/4 cup melted butter

Optional: maple syrup for serving

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and sugar until well combined.
  3. Add the bread cubes to the egg mixture and stir until every piece is fully coated. Let it sit for 2–3 minutes to soak up the mixture.
  4. Spoon the bread mixture into the prepared muffin tin, filling each cup about 3/4 full.
  5. Drizzle the melted butter evenly over the top of each muffin.
  6. Bake for 20–25 minutes, or until the muffins are golden brown and puffed up.
  7. Allow the muffins to cool slightly before removing them from the tin.
  8. Serve warm, dusted with cinnamon sugar or drizzled with maple syrup for extra sweetness.
