For the Cookies:

2 ½ cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 cup unsalted butter (softened)

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

Zest of 1 large orange

2 tablespoons fresh orange juice

For Decoration (Optional):

Orange food coloring (optional)

Royal icing or melted white chocolate for detailing

Edible glitter or sprinkles

Instructions

1. Prepare the Dough

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, use an electric mixer to cream the softened butter and sugar until light and fluffy (about 2-3 minutes).

Add the egg, vanilla extract, orange zest, and orange juice to the butter mixture. Mix until combined.

Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.

2. Chill the Dough

Wrap the dough in plastic wrap and refrigerate for at least 1 hour to firm up.

3. Roll Out and Cut Shapes

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

On a floured surface, roll out the chilled dough to about ¼-inch thickness.

Use fish-shaped cookie cutters to cut out cookies. Arrange them on the prepared baking sheets.

4. Bake the Cookies

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden. Cool the cookies completely on a wire rack before decorating.

 

5. Decorate (Optional)

Add a creative touch by using royal icing or melted white chocolate to pipe scales, eyes, or other designs on the cookies. Sprinkle with edible glitter or sprinkles for extra flair.

Notes

For a deeper orange flavor, you can add ½ teaspoon of orange extract.

These cookies are versatile—try using different cookie cutter shapes if you don’t have fish-shaped ones.

Store cookies in an airtight container at room temperature for up to one week, or freeze for longer storage.
