  • 4 cups chicken stock
  • 1 cup heavy whipping cream
  • 4 to 5 ounces fresh spinach
  • 1 cup sun-dried tomatoes
  • 1 medium onion, chopped
  • 5 garlic cloves, minced
  • 1/2 cup freshly shredded parmesan cheese
  • 1 tablespoon sun-dried tomato oil
  • 1/3 cup tomato paste

Instructions

  1. Sauté chopped onion in sun-dried tomato oil over medium heat until translucent. Add minced garlic and red chili flakes; sauté for an additional minute.
  2. Stir in paneer pasta and chicken stock. Bring to a boil, then reduce heat and simmer according to package instructions until al dente (8–10 minutes).
  3. Mix in tomato paste and heavy whipping cream. Then add salt, pepper, sun-dried tomatoes, and spinach; cook until spinach wilts (2–3 minutes).
  4. Remove from heat and fold in freshly shredded parmesan cheese and basil until melted into the sauce.
