  • 2 lbs chicken thighs
  • 3 tomatoes
  • 1 red bell pepper
  • 1 habanero pepper (adjust to taste)
  • 1/2 cup olive oil
  • 1 cup chicken stock
  • 1 onion
  • 1 tsp bouillon powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp curry powder
  • 1/2 tsp salt
  • extra salt and black pepper (for the chicken rub)

Instructions

  1. Prepare the chicken by washing and patting it dry. Season with salt and black pepper.
  2. In a large skillet, heat olive oil over medium heat. Brown the chicken on both sides for about 10 minutes.
  3. Chop half an onion and blend it with tomatoes, red bell pepper, and habanero until smooth.
  4. Remove browned chicken; sauté remaining chopped onion in the same oil until translucent.
  5. Pour in the blended mixture and boil for about 5 minutes.
  6. Add the chicken back in along with chicken stock and spices; adjust seasoning if needed.
  7. Cover and simmer for about 20 minutes until the chicken is fully cooked.
