Millionaires Cheesecake is the ultimate indulgent dessert that combines a luscious no-bake vanilla cheesecake with a buttery shortbread base, topped with rich caramel and smooth chocolate ganache.   • 1 cup all-purpose flour
  • 1 stick unsalted butter (114g)
  • 1/4 cup granulated sugar (50g)
  • 1/4 tsp salt
  • 3 1/4 cups cream cheese (740g)
  • 1/2 cup granulated sugar (100g)
  • 3 tbsp powdered sugar
  • 1 cup heavy whipping cream (240ml)
  • 1 tsp vanilla extract
  • 1 cup light brown sugar (200g)
  • 2 sticks unsalted butter (227g)
  • 1/3 cup golden corn syrup (100g)
  • 1 can condensed milk (397g)
  • 1 tsp salt
  • 1 cup dark chocolate (175g, chopped)
  • 1/2 cup whipping cream (120ml)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour, butter, sugar, and salt. Mix until crumbly and press into a springform pan. Bake for 15-20 minutes until golden brown and cool completely.
  2. Beat the cream cheese until smooth. Gradually add granulated sugars while mixing. Whip heavy cream to stiff peaks and fold into the cream cheese mixture with vanilla extract. Pour over cooled shortbread base.
  3. For caramel sauce, melt brown sugar, butter, corn syrup, condensed milk, and salt over medium heat until smooth; boil gently for 5 minutes. Cool slightly before pouring over cheesecake layer.
  4. To create ganache, heat whipping cream until boiling and pour over chopped chocolate; stir until smooth. Drizzle over the caramel layer.
  5. Chill for at least 4 hours before serving.
