Ingredients

  • 1 cup uncooked quinoa
  • 3 Persian cucumbers (or 1/2 English cucumber)
  • Handful of cherry tomatoes
  • 1 red bell pepper
  • 1/2 green bell pepper
  • Handful of kalamata olives
  • 2 tablespoons red onion
  • 3.5 ounces feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • Salt & pepper (to taste)

Instructions

  1. Cook quinoa according to package directions and allow it to cool.
  2. While cooling, chop the cucumbers, bell peppers, red onion, and halve the tomatoes.
  3. In a large bowl, combine the cooked quinoa with chopped vegetables.
  4. Prepare the dressing by mixing olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper in the same bowl.
  5. Toss everything together until well mixed. Chill before serving or enjoy immediately.
