- 1 cup uncooked quinoa
- 3 Persian cucumbers (or 1/2 English cucumber)
- Handful of cherry tomatoes
- 1 red bell pepper
- 1/2 green bell pepper
- Handful of kalamata olives
- 2 tablespoons red onion
- 3.5 ounces feta cheese
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- Salt & pepper (to taste)
- Cook quinoa according to package directions and allow it to cool.
- While cooling, chop the cucumbers, bell peppers, red onion, and halve the tomatoes.
- In a large bowl, combine the cooked quinoa with chopped vegetables.
- Prepare the dressing by mixing olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper in the same bowl.
- Toss everything together until well mixed. Chill before serving or enjoy immediately.
