  • 1/2 medium red onion
  • 1 can chickpeas (13.4 oz)
  • 1 can butter beans (14 oz)
  • 1 cup green olives
  • 7-8 jarred artichoke hearts
  • Fresh mint leaves
  • Fresh parsley
  • Extra virgin olive oil
  • Garlic cloves
  • Za’atar seasoning
  • Lemon juice
  • Lemon zest

Instructions

  1. Thinly slice the red onion and combine it with salt, lemon juice, and zest in a large bowl. Set aside.
  2. Drain and rinse the chickpeas and butter beans. Chop the green olives roughly. Mince the mint and parsley.
  3. In a pan over medium heat, sauté garlic in olive oil until slightly browned. Remove from heat and stir in za’atar, sumac, and cumin.
  4. Add chickpeas, butter beans, olives, artichokes, mint, and parsley to the onion mixture. Pour the warm marinade over everything and toss gently.
  5. Let the salad marinate for at least 2 hours before serving.
