  • 200 g pasta (Fusilli or Penne)
  • 1 large carrot, grated
  • 1 small cucumber, diced
  • 1 bell pepper (red or yellow), diced
  • 1/2 cup corn kernels
  • 1/4 cup almonds or cashews, chopped
  • 2 spring onions, sliced
  • 1 handful fresh coriander leaves, chopped
  • 1/4 cup olive oil
  • Juice and zest of 2 limes
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and rinse with cold water.
  2. While pasta cooks, prepare the vegetables: grate the carrot, dice the cucumber and bell pepper, slice the spring onions, and chop the coriander.
  3. Toast nuts in a dry pan over medium heat for 2–3 minutes until fragrant (optional).
  4. In a small bowl, mix lime juice, zest, olive oil, salt, and pepper to create the dressing.
  5. In a large bowl, combine cooled pasta with prepared vegetables, toasted nuts, and coriander.
  6. Drizzle dressing over the salad and toss well to coat all ingredients evenly.
  7. Chill in the refrigerator for at least 15–20 minutes before serving.
