  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 to 2 tablespoons fresh lemon zest
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/3 cup freeze-dried blueberries
  • Coarse sanding sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a stand mixer, combine sugars and lemon zest; massage zest into sugars.
  3. Add room temperature butter and mix until fluffy.
  4. Incorporate egg and vanilla extract, mixing until combined.
  5. In a separate bowl, whisk together flour, baking soda, cream of tartar, and salt; gradually add to wet ingredients while mixing on low speed.
  6. Gently fold in chopped freeze-dried blueberries.
  7. Chill dough for at least 30 minutes then scoop onto prepared sheets and roll in coarse sugar.
  8. Bake for 8-9 minutes until edges are golden; cool before serving.
