Ingredients
- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped chives (optional)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 2 large eggs
- 1/2 cup breadcrumbs
- 1/4 cup chopped chives (optional, for garnish)
- Oil for frying or cooking spray for baking

Instructions
Preheat your oven to 400°F (200°C). Lightly grease a muffin tin or baking sheet with cooking spray or oil.
In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, chives, garlic powder, onion powder, salt, and pepper. Mix well.
Add the eggs and breadcrumbs to the potato mixture. Stir until fully combined and the mixture holds together.

Using a spoon or your hands, form the mixture into small balls or scoops and place them into the prepared muffin tin or onto the baking sheet.
Bake in the preheated oven for 15–20 minutes, or until golden brown and crisp on the edges.
Remove from the oven and let cool for a few minutes before serving.
Optionally, garnish with extra chopped chives.
Notes
You can add cooked bacon bits or a pinch of paprika for a smoky flavor. These can also be air-fried at 375°F for 10–12 minutes.
