  • 3/4 cup cake flour
  • 1 tsp. corn starch
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup cold unsalted butter (cubed)
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat oven to 400°F. In a bowl, whisk together all-purpose flour, cake flour, baking soda, baking powder, cornstarch, and salt; set aside.
  2. Cream cold butter with sugars in a stand mixer until light and fluffy. Add the egg and yolk; blend well.
  3. Gradually mix in dry ingredients until just combined. Fold in chocolate chips gently.
  4. Measure out about six cookies (5.7 oz each) and arrange them on a lined cookie sheet without flattening.
  5. Bake for 10-12 minutes until golden brown. Let cool on the sheet for at least 15 minutes before transferring to a cooling rack.
