  • For the Beef Tenderloin:

    • 2 beef tenderloins
    • 2 tablespoons olive oil, divided
    • 1 teaspoon sweet paprika
    • 1 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried rosemary
    • Salt and fresh ground pepper, to taste

 

  • For the Honey Garlic Glaze:

    • 4 cloves garlic, minced
    • 1/4 cup honey (omit if keto)
    • 1 tablespoon Sriracha (or any hot sauce of choice)
    • 3 tablespoons low-sodium soy sauce (or coconut aminos for paleo)
    • 1 tablespoon Dijon mustard
    • 1 tablespoon olive oil

Instructions

  • Preheat Oven:

    • Preheat the oven to 375˚F (190ºC).
    • Line a baking dish with aluminum foil or parchment paper and set aside.
    • Pat dry the beef tenderloins with paper towels.
  • Prepare the Spice Rub:

    • In a small bowl, mix paprika, garlic powder, onion powder, thyme, rosemary, salt, and pepper.
    • Rub this spice mix all over the beef tenderloins.
  • Sear the Beef:

    • Heat 1 tablespoon olive oil in a skillet over medium heat.
    • Sear the beef tenderloins until browned on all sides, about 3 to 5 minutes per side.
    • Transfer the beef to the prepared baking dish.
    • The goal is not to cook it fully but to create a flavorful crust and lock in moisture.
  • Make the Glaze:

    • In a bowl, whisk together garlic, honey, soy sauce, mustard, Sriracha, and remaining olive oil.
    • Brush this mixture over the browned beef tenderloins, reserving some for serving.
  • Roast the Beef:

    • Bake for 15 minutes, then remove from the oven.
    • Tent a piece of foil over the beef to prevent burning while ensuring even cooking.
    • Return to the oven and continue to roast for another 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare or 145°F (62°C) for medium.
    • Use an instant-read thermometer to check for doneness.

 

  • Rest and Serve:

    • Remove from the oven and let the beef rest for 10 minutes, with the foil on top.
    • Slice against the grain and serve, garnished with rosemary, orange slices, and the reserved glaze.
