  • 300 g Orzo noodles
  • 80-100 g Arugula
  • 250 g Cherry tomatoes
  • 150 g Mozzarella cheese
  • 40 g Sun-dried tomatoes
  • 50 g Parmesan cheese
  • 50 g Pine nuts
  • 3 EL Olive oil
  • 1 EL Balsamic vinegar
  • Juice of ½ Bio lemon
  • 1 Knoblauchzehe
  • 1 TL Salt
  • 1 TL Pepper
  • 1 TL Italian herbs
  • 1 TL Honey

Instructions

  1. Cook orzo noodles in salted boiling water according to package instructions (8-10 minutes). Drain and let cool.
  2. While the orzo cooks, halve cherry tomatoes, dice mozzarella, and chop sun-dried tomatoes.
  3. In a bowl, whisk together olive oil, balsamic vinegar, water, lemon juice and zest, minced garlic, salt, pepper, Italian herbs, and honey.
  4. In a large bowl, combine cooled orzo with arugula, cherry tomatoes, mozzarella, and sun-dried tomatoes.
  5. Pour dressing over the salad and mix well. Top with grated Parmesan and toasted pine nuts before serving.
