For the Flatbreads:

  • 2 cups all-purpose flour (240 grams)
  • 2 teaspoons baking powder (8 grams)
  • ½ teaspoon sea salt (2.85 grams)
  • 2 tablespoons extra virgin olive oil (30 ml)
  • ⅔ cup water (168 ml)

For the Garlic Sauce:

  • 2 tablespoons extra virgin olive oil (30 ml)
  • 1 tablespoon freshly chopped parsley (3.80 grams)
  • 4 cloves garlic, grated or finely minced

Instructions

In a large mixing bowl, combine the flour, baking powder, and sea salt. Stir to mix the dry ingredients.
Add in the olive oil and water, then mix with a spoon or spatula until a dough forms. Knead with your hands until smooth and well combined. Form the dough into a ball.
Lightly flour a clean surface. Place the dough on the surface, divide it in half, and shape each half into a ball. Cut each ball into 4 equal pieces to make 8 total.
Preheat a large grill pan over medium heat.
Roll each dough piece into a flatbread about ⅛-inch thick.
Before placing each flatbread in the pan, lightly brush one side with olive oil. Place it oil-side down in the pan. Brush the top side with a bit more olive oil.
While the flatbread cooks, mix the garlic sauce by combining olive oil, chopped parsley, and grated garlic in a bowl. Stir to combine.

Cook the flatbread for about 75 seconds per side. After flipping, spread a spoonful of garlic sauce on top.
Remove once both sides are golden and cooked through. Repeat with the remaining dough.
Serve warm and enjoy immediately.

Use a cast iron grill pan for best results.

Fresh garlic and parsley give the best flavor—avoid dried substitutes.
