1. In a stand mixer add yeast, water and sugar. Mix.
2. Cover with a dish towel and let stand for 5 minutes.
3. After yeast proofs, add salt and oil. Mix well.
4. Add bread flour 1 cup at a time, mixing between additions.
5. Once all flour is added, continue to knead dough for an additional 5 minutes.
6. *Lightly* flour a work surface and roll dough to ¼ inch thick.
7. Using a pizza cutter, cut breadsticks about ½ inch wide.
8. Lay breadsticks out on a lined cookie sheet, making sure to leave ¼ inch between each stick as they will expand.
9. Cover the pan of breadsticks with a clean dish towel and let rest for 20 minutes.
10. Preheat oven to 375°F
11. Bake for 10 minutes, then remove.
12. Immediately spread melted butter on top of breadsticks and generously cover with parmesan cheese.
13. Serve with marinara sauce.
You can substitute all-purpose flour for bread flour if needed.
Use fresh garlic in the butter for extra flavor.
