  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Chopped green onions for garnish

Instructions

  1. Cook rigatoni in salted boiling water according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Season chicken cubes with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken until golden brown, about 5-7 minutes. Set aside.
  3. In the same skillet, sauté sliced carrots for 3-4 minutes until softened, then add minced garlic and cook for an additional minute.
  4. Lower heat and add butter to the skillet. Once melted, stir in honey, soy sauce, and black pepper; simmer for 2-3 minutes until thickened.
  5. Add cooked chicken back into the skillet and toss in the sauce. Combine with rigatoni, using reserved pasta water to adjust consistency if needed.
  6. Serve warm garnished with chopped green onions.
