  • 8 digestive biscuits
  • 250 g light cream cheese
  • 350 g Greek yogurt (vanilla or plain)
  • 2 eggs
  • 150 g raspberries
  • Sweetener of choice

  1. Preheat your oven to 160°C (320°F).
  2. In a food processor, blend digestive biscuits until crumbs form. Mix in melted butter and press into a lined brownie pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a mixing bowl, combine cream cheese, Greek yogurt, eggs, sweetener, protein powder, lemon juice, and zest. Mix until smooth but do not overmix.
  5. Layer raspberries on the cooled crust, pour half of the cheesecake mixture over them, then add more raspberries and remaining batter on top.
  6. Bake for 30-40 minutes until set; cool slightly before refrigerating for at least 5 hours.
  7. Slice into 12 bars and enjoy!
