For the Chicken:

  • 4 boneless skinless chicken breasts (or thighs)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

For the Potatoes:

  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Garnish:

  • 1 tablespoon chopped fresh parsley

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment or lightly grease it.

2. Pat chicken dry and rub with olive oil. Season with Italian seasoning, paprika, salt, and pepper.

3. In a bowl, toss halved potatoes with olive oil, garlic, Parmesan, salt, and pepper.

4. Place seasoned chicken on one side of the baking sheet and spread potatoes on the other side in a single layer.

5. Bake for 25–30 minutes, flipping potatoes halfway through. Ensure chicken reaches 165°F (74°C).

6. Optional: Sprinkle extra Parmesan over the dish in the last 5 minutes and broil for a golden crust.

7. Remove from oven and garnish with chopped parsley before serving.

Notes

• Use chicken thighs for extra juiciness if preferred.

• Red potatoes or Yukon Golds work best for crispiness and flavor.

• For added flavor, sprinkle extra garlic powder or onion powder before baking.

• Store leftovers in an airtight container for up to 3 days. Reheat in the oven to keep the crisp texture.
