  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat the oven to 160ºC (320ºF) for fan or 170ºC (338ºF) for conventional. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and then mix in vanilla extract.
  3. In another bowl, whisk eggs and both sugars until thick and fluffy, about 5 minutes.
  4. Sift flour, cocoa powder, baking powder, and salt into a separate bowl; add chocolate chips.
  5. Fold the melted chocolate mixture into the egg mixture gently. Then fold in dry ingredients until just combined.
  6. Drop spoonfuls of batter onto the prepared tray, spacing apart to allow spreading.
  7. Bake for 12-14 minutes until set but still soft in the center. Allow cooling before serving.
