Description
Super simple homemade breakfast potatoes made with cubed fresh potatoes, herbs, and seasonings. These crispy-on-the-outside, tender-on-the-inside potatoes are perfect with eggs, toast, in breakfast burritos, or as a hearty side to any brunch.
Ingredients
- 4 potatoes, cut into ½-inch cubes
- 1 tablespoon butter
- 1 tablespoon oil (olive oil or vegetable oil)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 tablespoon fresh chopped parsley (or 1/2 teaspoon dried)
Instructions
Cut the potatoes into ½-inch cubes.
Heat a skillet over medium-high heat and add the butter and oil.
Once hot, add the potatoes and toss to coat them in the butter/oil mixture.
Sprinkle with salt, pepper, garlic powder, and onion powder (reserve the parsley for later).
Cover the skillet and let the potatoes steam lightly for 3–4 minutes.
Remove the lid and stir the potatoes. Continue cooking uncovered, stirring occasionally to cook evenly on all sides.
Potatoes are ready when golden and crispy outside, and soft inside.
Sprinkle with fresh parsley and serve immediately.
Notes
For even crispier potatoes, avoid overcrowding the pan.
You can parboil the potatoes for 5 minutes before sautéing for a quicker cook time.
Try adding paprika or chili flakes for extra flavor.
