  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • 1 tablespoon fresh minced parsley

Instructions

  1. Preheat your oven to 400 degrees F and line a baking sheet with a silicone mat or nonstick foil.
  2. Peel the Russet potatoes and dice them into ½-inch cubes. Pat them dry with paper towels to remove excess moisture.
  3. In a large bowl, combine the diced potatoes with olive oil, kosher salt, black pepper, garlic powder, paprika, and onion powder. Toss until evenly coated.
  4. Spread the seasoned potatoes in an even layer on the baking sheet and bake for 20-23 minutes until soft but not golden brown.
  5. Stir the potatoes and broil for an additional 4-5 minutes until golden brown and crispy.
  6. Remove from the oven and garnish with fresh parsley before serving hot.
