  • 4 slices nitrate-free bacon
  • 4 large eggs
  • 1/3 cup shredded cheddar cheese
  • 2 tablespoons sliced chives
  • Sea salt and black pepper
  • 2 tablespoons avocado oil, or olive oil

Instructions

  1. Preheat oven to 400°F.
  2. Wash and pierce potatoes with a fork; rub with avocado oil.
  3. Bake directly on the oven rack for 30-40 minutes until tender.
  4. Cool slightly, slice in half, and scoop out some flesh.
  5. Season potato halves, add bacon, cheese, and crack an egg into each.
  6. Bake again for about 15 minutes until egg whites are set but yolks remain runny.
  7. Garnish with chives and serve.
