This traditional Turkish egg scramble, called Menemen, is a quick, flavorful dish made with onions, peppers, tomatoes, and soft scrambled eggs. Perfect served warm with crusty bread for breakfast or brunch!

Ingredients

  • 1 tablespoon olive oil
  • 1 small white onion, finely diced
  • 1 large green bell pepper (or poblano/Anaheim pepper), diced
  • 1 (15-ounce) can diced tomatoes, with their juices
  • 1 tablespoon butter
  • 1 teaspoon Aleppo pepper (or smoked paprika + cayenne)
  • Fine sea salt and freshly-cracked black pepper
  • 34 eggs
  • Optional garnishes: sliced chives or chopped parsley, crumbled feta, sliced avocado

Instructions

1. Heat olive oil in a large sauté pan over medium-high heat. Add onion and pepper and sauté for 5 minutes until softened.

2. Reduce heat to medium. Add tomatoes, butter, Aleppo pepper, salt, and pepper. Stir and cook for 2 minutes until tomatoes are hot.

3. Crack the eggs over the mixture. Let cook for 1 minute, then break yolks and stir gently to create swirls. Cook until just set, about 3–4 minutes total.

4. Serve immediately with your favorite garnishes and crusty bread.

Notes

Turkish-style green peppers can be substituted with bell, poblano, or Anaheim peppers.

If you don’t have Aleppo pepper, use 1/2 teaspoon smoked paprika and a pinch of cayenne or red pepper flakes.

Best served immediately, warm, with bread for dipping.
