  • 1/2 cup butter (softened)
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth. Mix in the egg and vanilla extract.
  3. Gradually add flour, salt, and baking powder; mix until just combined.
  4. Scoop out nine cookie balls onto the baking sheet and gently flatten each ball to about 1 inch thick, creating an indent in the center for filling.
  5. In a separate bowl, combine filling ingredients (butter, brown sugar, chopped pecans, heavy cream, cinnamon, nutmeg) and spoon it into the indents of the cookie dough.
  6. Bake for 8-9 minutes until golden around the edges. Let cool on the baking sheet before transferring to a wire rack.
