2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
1/2 cup low-sodium soy sauce
1/4 cup packed brown sugar
1/4 cup bourbon
2 cloves garlic, minced
1 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
2 tablespoons cornstarch
2 tablespoons water
Optional garnish: sliced green onions and sesame seeds

Instructions

  1. In a slow cooker, combine the chicken pieces, soy sauce, brown sugar, bourbon, minced garlic, ground ginger, and crushed red pepper flakes. Stir to combine.
  2. Cover and cook on low for 4-5 hours or on high for 2-3 hours, or until the chicken is cooked through and tender.
  3. In a small bowl, mix the cornstarch and water until smooth. Stir the mixture into the slow cooker.
  4. Cover and cook on high for an additional 20-30 minutes, or until the sauce has thickened.
  5. Serve the bourbon chicken over rice, garnished with sliced green onions and sesame seeds if desired.

Notes

For a thicker sauce, you can increase the amount of cornstarch/water mixture.
