  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (10 ounce) can Rotel diced tomatoes with green chilies (with juices)
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 tablespoon chili powder
  • 1 (12 ounce) can corn (drained)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 cup heavy/whipping cream
  • 2 cups cooked chicken (I used a rotisserie chicken)
  • Salt & pepper (to taste)

Instructions

  1. Heat olive oil in a large soup pot over medium-high heat. Sauté chopped onion until lightly browned, about 5-7 minutes.
  2. Stir in crushed tomatoes, Rotel, and chicken broth along with garlic powder, smoked paprika, chili powder, corn, and black beans. Increase heat to high.
  3. Once boiling, reduce heat and let simmer for 5 minutes with the lid slightly ajar.
  4. While simmering, prepare your desired toppings.
  5. Stir in heavy cream and cooked chicken; warm through for 3-5 minutes. Season to taste with salt and pepper.
  6. Serve hot in bowls topped with your choice of toppings.
