  • ¾ cup cake flour
  • ½ cup unsalted butter (cold)
  • ½ cup creamy cookie butter (Biscoff)
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 ½ cups chocolate chips
  • 10 crushed Biscoff cookies

Instructions

  1. Preheat the oven to 375°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  3. Cream cold butter, cookie butter, and sugars until smooth using a stand mixer.
  4. Add the egg, egg yolk, emulsion or extract, mixing until combined.
  5. Gradually fold in the dry ingredients until just mixed. Gently incorporate chocolate chips and crushed Biscoff cookies.
