  • 1 cup unsalted butter (softened)
  • 1 ⅓ cups granulated sugar
  • 2 ¾ cups all-purpose flour
  • 4 tablespoons unsalted butter (for cinnamon swirl)
  • ⅓ cup packed brown sugar
  • 2½ teaspoons ground cinnamon
  • 1 large egg
  • 1 large egg yolk

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a bowl, mix together the cinnamon swirl ingredients: softened butter, brown sugar, flour, cinnamon, and salt until combined.
  3. For the cookie dough, cream together softened butter and granulated sugar until smooth. Add vanilla extract, egg, and egg yolk; mix well.
  4. In another bowl, whisk flour, baking powder, cornstarch, and salt together. Gradually add to the wet mixture until just combined.
  5. Take about 2 tablespoons of dough, flatten slightly, place a teaspoon of the cinnamon filling in the center, fold edges over the filling to seal it in, then roll into a ball.
  6. Place on prepared sheets about two inches apart and bake for approximately 11 minutes or until lightly golden around edges.
