Ingredients

Scale
  • 2 ¼ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup unsweetened Dutch-processed cocoa powder
  • 1 ¼ cups granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ⅔ cup powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a small bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a medium bowl, combine cocoa powder, granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
  4. Gradually incorporate the dry ingredients into the wet mixture until just combined. Cover the bowl with plastic wrap and refrigerate for 30–45 minutes.
  5. Use a cookie scoop to form dough balls (about 1 ¼ inches) and roll each in powdered sugar until fully coated. Place on the prepared baking sheet with space between them.
  6. Bake for 10–11 minutes. Let cool on the baking sheet for 2 minutes before transferring to wire racks.
