Ingredients

  • 68 thin sliced chicken breasts
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cup buttermilk
  • 1 egg
  • 1 tbsp hot sauce
  • Oil for frying
  • Gravy:
  • 1/4 cup reserved oil from frying
  • 1/3 cup flour
  • 2 cups milk
  • Salt & pepper to taste

Instructions

  • Heat oil in a deep fryer or large pan on the stove (a few inches deep) to 325°F.

  • In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.

  • In another bowl, whisk together buttermilk, egg, and hot sauce.

  • Dredge chicken in the flour mixture, then dip into the egg mixture, then back into the flour mixture, pressing down to ensure the flour sticks well.

  • Place chicken in the pan or deep fryer and fry on each side for 3-5 minutes until golden brown. Remove and drain on a paper towel-lined plate. Repeat with all chicken.

  • To make the gravy, add 1/4 cup of reserved frying oil to a large pan and heat over medium-high. Stir in the flour until absorbed and cook for about 1 minute.

  • Slowly add milk, whisking continuously until thickened. Season with salt and pepper to taste.

 

  • Pour gravy over individual chicken pieces before serving.

Notes

  • You can use a regular deep fryer instead of a skillet.

  • If you don’t want to use frying oil for the gravy, substitute butter or bacon grease.

  • Thin-cut chicken breasts work best, but you can slice regular chicken breasts in half.

 

  • Adjust seasoning in both the flour and gravy to your liking.
